PUMPKIN SOUP

Hello everybody,
the leaves turn red and orange and it gets colder. Finally it is fall. For me that means it is time for pumpkin soup. Over the years I tried a lot of different variations however my moms one is my all time favourite soup. Pumpkin soup is my favourite food in fall so I decided to share the recipe with you.

INGREDIENTS

  • 1 hookaido pumpkin
  • 1 garlic clove
  • 1 tablespoon ghee
  • 1 liter broth
  • 100 ml white wine
  • 250 ml sour cream
  • salt
  • pepper
  • nutmeg
  • pebbles
  • pumpkin seed oil

METHOD

  1. Remove the seeds of the pumpkin and cut it into small pieces (you don´t have to remove the skin)
  2. Heat ghee in a pot, cook the pumpkin and the crushed garlic clove for 2 min
  3. Add one liter broth, 100 ml white wine and 250 ml sour cream
  4. Bring to boil, reduce heat to low and simmer for 30 minutes
  5. Puree the soup using a blender
  6. Add salt, pepper and nutmeg
  7. Serve with roasted pebbles and pumkin seed oil
